A friend said something that we\u2019ve never forgotten: \u201cJust make the beer you want to drink\u201d
\nThere are many good beers in Japan, but we also wanted to try other flavors. We were sure there are many others who also want to taste other styles of beer. This is why we founded KBC.
\nOur beer making is based on American and Belgian beer.
\nAmerica is a pioneer in the world of craft beer and has led the way for the past 30 years. New types of hops are released on a yearly basis. Innumerous brewers are creating hybrid beers with mixed varieties of ingredients and brewing methods and new styles of beer with high specialized ABV (alcohol by volume) and IBU (International Bitterness Units). We also strive to create new styles of beer that don\u2019t fit into existing categories.
\nBelgium has continued to make beer with an emphasis on history and tradition. It also has brewers who look beyond history and tradition and take pride in having their own style, like other brewers in America. By selectively using natural yeast and adjusting the sweetness, spiciness, bitterness, sourness, lightness, and heaviness, they create new beers. The manufacturing processes used for Belgian beer are varied and complex.
\nThe beers of both countries are intriguing and flavorful. That gave us an idea: By extracting the goodness of both beers and combining them, we might be able to create something even more unique and special.
\nAt our brewery, the yeast we use is Belgian and the hops are mostly American. With this combination, we create beer with unique flavors that never existed before. This is only the beginning for us. Even we do not know what sort of beer will be made and how things will develop at our brewery in the future.
